  • 35 pieces tindora (ivy gourd)
  • 1 medium-sized potato
  • 3 tbsp oil
  • ½ tsp mustard seeds
  • A pinch of papadio kharo (optional)
  • 1 tbsp green chili paste
  • 3 cloves finely chopped garlic
  • ½ tsp turmeric powder
  • 3 tbsp coriander powder
  • salt to taste

Instructions
 

  • Start by washing 35 pieces tindora and 1 medium-sized potato thoroughly. Cut the potato into small cubes and slice the tindora lengthwise.
  • In a pan, heat 3 tbsp oil over medium heat. Once the oil is hot, add ½ tsp mustard seeds and let them splutter.
  • Add A pinch of papadio kharo (if using) along with the prepared tindora and potato to the pan. Stir well to combine.
  • Next, add 1 tbsp green chili paste, 3 cloves finely chopped garlic, ½ tsp turmeric powder, 3 tbsp coriander powder, and salt to taste. Mix everything together so that the spices coat the vegetables evenly.
  • Cook the mixture, stirring occasionally, until the vegetables reach your desired level of crispness and tenderness. This usually takes about 10-15 minutes.
  • Once cooked, remove from heat and serve your delicious Tindora Nu Shaak hot with roti or rice of your choice.
