Crispy Ringan Na Palita: Irresistible Eggplant Fritters You Must Try!

Ringan Na Palita, or eggplant fritters, is a delicious and easy-to-make dish that combines the rich flavors of spiced besan (gram flour) with tender eggplants. Ingredients

  • 1 medium eggplant
  • 1 ½ cups besan (gram flour)
  • 1 tbsp jowar flour (sorghum flour)
  • 2 tbsp green chili paste
  • 1 tbsp garlic paste
  • ½ tsp turmeric powder
  • 1 tsp Kashmiri red chili powder
  • 2 tbsp coriander powder
  • ½ tsp hing (asafoetida)
  • salt to taste
  • freshly chopped green garlic (for batter and garnish)
  • freshly chopped coriander leaves (for batter and garnish)
  • Oil (for frying)

Instructions

  • In a mixing bowl, combine 1 ½ cups besan, 1 tbsp jowar flour, 2 tbsp green chili paste, 1 tbsp garlic paste, ½ tsp turmeric powder, 1 tsp Kashmiri red chili powder, 2 tbsp coriander powder, ½ tsp hing, freshly chopped green garlic, freshly chopped coriander leaves and salt to taste. Add water and mix well to form a smooth batter.
  • Take the 1 medium eggplant and cut it into circular slices about ½ inch thick. The thickness can be adjusted based on how crispy you want the fritters.
  • Dip each eggplant slice into the prepared batter, ensuring they are well coated.
  • Heat oil in a frying pan over medium heat. Once the oil is hot, carefully add the coated eggplant slices and shallow fry them until they are golden brown and crispy on both sides.
  • Once cooked, remove the fritters from the oil and place them on a paper towel to absorb excess oil. Garnish with chopped freshly chopped green garlic and freshly chopped coriander leaves. Serve hot as an appetizer with ketchup or your favorite dipping sauce.
